Buckwheat Crepe Recipe: A gluten-free staple for Breakfast

Buckwheat is a great choice for those on a gluten free diet, which can be particular beneficial during peri-, menopause and post-menopause. Many women experience increased sensitivity to gluten, which can contribute to inflammation, bloating, and digestive discomfort. Buckwheat is rich in fibre, minerals and antioxidant which may help support heart health and reduce blood sugar. Despite its name it is not actually related to wheat, but is a nutrient-rich seed that has been consumed for centuries in many cultures around the world.

While traveling baking our own buckwheat bread wasn't an option. That’s when we optimized this simple yet nourishing buckwheat recipe, which has now become a daily staple in our routine. We love its versatility and convenience – we usually prepare a batch for two days and simply reheat it when needed, making it perfect for our on-the-go lifestyle.

Some of my favorite combinations include pairing it with smoked salmon and eggs for a savory twist, or if you prefer something sweet, try it with avocado and a drizzle of raw honey.

Ingredients

  • 2 cups 100% buckwheat flour

  • 1 tablespoon extra virgin olive oil

  • 1 pinch sea salt (to taste)

  • 1 pinch black pepper

  • 1 tablespoon sorghum flour (optional)

  • 3 cups water

Preparation

  1. Add the buckwheat flour to a mixing bowl.

  2. Stir in the extra virgin olive oil, salt, black pepper, and sorghum flour (if using).

  3. Gradually add the water while mixing until you achieve a smooth batter.

  4. Let the mixture rest for 10 minutes.

  5. Heat a pan over medium heat.

  6. Using a ladle, scoop the batter and spread it thinly on the pan.

  7. Cook for about 3 minutes on each side until lightly golden.

  8. Serve warm and enjoy with your favorite toppings—wrap it with smoked salmon and avocado for a savory option, or avocado with a drizzle of honey for a sweet treat.
